Something to Cheer Us Up!

Sometime today the first of the heritage tomatoes will arrive! These are Pat Smith's Kirklin Farms heritage tomatoes. Thus begins the 2020 BLT season. After a difficult, lonely, and unpredictable several months, we can all have something very special and comfortingly familiar.

Every bite of a BLT should have a juicy mouthful of bacon, lettuce, tomato, and mayo. The bacon should shatter so that you don’t have to pull it out of the sandwich with your teeth or squeeze the sandwich to hold it as you bite. The lettuce should be both crisp and a bit delicate. The heritage tomato should never be refrigerated and should be perfectly ripe. Hold it gently in your hand and feel the slight give when it is ripe. Each slice needs just a few grains of salt to highlight its contribution of acid and sunlight. The sandwich should drip a bit onto your plate, the toasted oatmeal bread should soften with the juice of the tomato but not disintegrate. OK, I admit. I’ve gone overboard, but I do love a good BLT.

We also have something else new, Cold Brew Coffee! And I do love Cold Brew. It is smooth and complex without a hint of bitterness or sourness. We serve it cold with ice or you can ask us to heat it up. To make it, we play a game. We go to the Water Street roasting facility and have them grind Bali Blue Moon coffee beans while we wait. Then within 10 minutes of the grinder shutting off, we are back at the bakery and are beginning to steep it in cool water capturing its complexity.  It then steeps for 18 hours and after which we filter and refrigerate it. 

On another note, we are looking for people to join us. Typically we hire for full-time jobs which include paid vacation and good health insurance.  We don’t work overnight but we do start pretty early in the morning. If you, or folks you know, can’t stop talking about the sour starter or the killer sandwich you made last night, it might just be a fit. Please send a resume to me at sbakery@tds.net

Got chickens or pigs?? We need someone to use our stale or damaged bread for animal feed as I hate having to put it in the dumpster.
